Mango & Passionfruit Chia Pudding
My obsession with chia puddings continues! Mango, passionfruit and coconut is one of my favourite combinations and it tastes like you are on holiday.
Makes 4 servings
MANGO & PASSIONFRUIT CHIA PUDDING
chia seeds (black or white), 50g (60ml or 1/4 cup)
yoghurt (mango or passionfruit), 375g (375ml or 1 + 1/2 cup) - a Greek yoghurt works well
milk, 125g (125ml or 1/2 cup)
OPTIONAL TOPPINGS
yoghurt (unsweetened Greek)
fresh or tinned mango
passionfruit (fresh or defrosted from frozen)
coconut (chips or thread or desiccated)
granola
Place all the chia pudding ingredients in a container and mix to combine.
Cover and place it in the fridge overnight to set.
To serve, divide the chia pudding between bowls or containers.
Top with unsweetened Greek yoghurt, fresh mango, passionfruit pulp, coconut chips or your favourite granola.
